6 Loaded Toast Recipes

Who doesn't love toast topped with all the good things? It's a great simple breakfast when you're in a rush, or a satisfying snack any time of the day or night. These 6 healthy plant-based toast recipes are hearty and flavourful and there is something for those with a sweet tooth, or those that prefer a more savoury fare.

 
 

Curried Tofu Scramble Toast

 

Serves 2 people

 

½ package (175 grams) extra-firm tofu

½ tsp ground turmeric

1 tsp curry powder

¼ tsp ground cumin

½ small tomato

1 handful cilantro leaves

½ tsp agave

salt and pepper (use black salt if you have it)

 

2 large slices of bread

3 tbsp Fauxmagerie Zengarry Aged Cumin cashew cheese

 
  1. Heat 1 tsp of oil on medium heat in a frying pan

  2. Take tofu and crumble into a frying pan. Add turmeric powder, cumin powder, curry powder, minced cilantro, chopped tomato and agave into the pan. Sauté for 4 minutes until heated through. Season with salt and pepper to taste.

  3. Toast your toast in the toaster and spread on your Fauxmagerie Zengarry Aged Cumin cashew cheese on your toast and top with tofu scramble.

 

Jalapeno Mushroom Toast

 

Serves 2 people

 

16 small white, brown or shitake mushrooms

1 tbsp vegan butter

2 tsp soy sauce

Salt and pepper to taste

 

2 large pieces of bread

3 tbsp Fauxmagerie Zengarry Smokey Jalapeño cashew cheese

1 tbsp finely chopped chives

 
  1. Slice mushrooms into thin slices. Heat butter on medium heat in a pan and add in your mushrooms, soy sauce, salt, and pepper. Saute for 3-5 minutes until soft.

  2. Toast your toast in the toaster and spread on your Fauxmagerie Zengarry Smokey Jalapeño cashew cheese and top with mushrooms and finely chopped chives.

 
 

Apple Cinnamon Toast

 

Serves 2 people

 

2 apples

2 tsp vegan butter

1 tsp cinnamon

¼ tsp cumin seeds

1 tbsp maple syrup

 

2 large slices of bread

3 tbsp Fauxmagerie Zengarry Aged Cumin cashew cheese

 
  1. Slice apples into thin slices.

  2. Heat butter on medium heat in a pan and add in your apples, cinnamon, and cumin seeds. Saute for 3-5 minutes until soft.

  3. Toast your toast in the toaster and spread on Fauxmagerie Zengarry Aged Cumin cashew cheese. Top with apples and serve. Garnish with fresh mint if desired.

 
 

Balsamic Peach Zengarry toast

 

Serves 2 people

 

1 can peaches sliced in water or 2 small fresh peaches, sliced

1 tbsp white balsamic vinegar

½ tbsp maple syrup

 

2 large pieces of bread

3 tbsp Fauxmagerie Zengarry Double Crème cashew cheese

1 tbsp fresh mint leaves

 

Place peaches into a frying pan and saute on medium heat for 3-5 minutes with white balsamic, until heated.

 

Toast your toast in the toaster and spread your sliced Fauxmagerie Zengarry Double Crème cashew cheese on your toast and top with peaches and mint leaves.

 
 
 

Double Crème Peanut Butter Berry Toast

 

Serves 2 people

 

1 cup mixed fresh berries of choice

3 tbsp peanut butter

2 tbsp jam of choice (we used strawberry)

3 tbsp Fauxmagerie Zengarry Double Crème cashew cheese

2 large slices of bread

 
  1. Slice your berries in half or quarters if too big.

  2. Toast your toast in the toaster. Spread on your peanut butter, jam and then sliced Fauxmagerie Zengarry Double Crème cashew cheese.

  3. Top with fresh berries and a drizzle of maple syrup and/or fresh mint if desired.

 

Roasted Tomato Toast

 

24 baby tomatoes

1 tsp olive oil

2 large slices of toast

A drizzle of balsamic glaze

Pinch salt and pepper

Pinch of fresh thyme

3 tbsp Fauxmagerie Zengarry Sundried Tomato and Basil cashew cheese

 
  1. Preheat the oven to 350 degrees F. Cut baby tomatoes in half.

  2. Drizzle with olive oil and toss with a pinch of salt, pepper and pinch of fresh minced thyme.

  3. Bake for 15-20 minutes until tomatoes have golden edges.

  4. Toast your toast in a toaster, spread on your Fauxmagerie Zengarry Sundried Tomato and Basil cashew cheese. Top with roasted tomatoes and a drizzle of balsamic glaze and more fresh thyme if desired.
